Mexican Street Corn Tacos 🌮🌽
These crispy Mexican Street Corn Tacos are everything😍! It’s Day 95 of Healthy Easy Recipes and these are my summer obsession. Perfect for summer nights, quick lunches, or just when you’re craving something delicious and fun.
Recipe below👇
For the street corn salad:
• 2 ears corn, grilled or boiled
• 2 green onions, chopped
• Handful of cilantro, chopped
• 1 tbsp olive oil
• 1 tbsp lime juice
• 1 tbsp sour cream
• 1/2 tsp smoked paprika
• Salt & pepper to taste
For the tacos:
• Flour tortillas
• Shredded cheese
• Shredded chicken (rotisserie works great!)
• Cooking spray or olive oil
How to:
1️⃣ Mix all the corn salad ingredients in a bowl.
2️⃣ Preheat oven to 425°F and line a baking sheet with parchment.
3️⃣ Add cheese, chicken, and corn salad to one half of each tortilla and fold. (Don’t overstuff!)
4️⃣ Spray with cooking spray or brush with oil.
5️⃣ Bake 5–10 mins until golden and crispy.
💡Tip: If your tacos pop open, place a bowl or plate over each one for 10 seconds to help them stay shut.
