Quick and easy meal ideas that meet the above genre ~

1: high protein chicken bowl (meal prep friendly + high in protein)

2: egg + cottage cheese sourdough toast w/ blueberries (high in protein, sourdough for the gut health benefit and fruit for the antioxidant boost)

3: shrimp spring rolls (fiber rich and high in protein)

4: tuna salad bowl ~ (high in protein, includes healthy fats from the avocado)

5: chicken plate w/ turmeric rice + sautéed spinach (high in protein and the turmeric also helps aid in fighting inflammation)

One of the biggest hurdles for anyone trying to eat healthier is time. That’s where meal prepping comes in! I often dedicate a couple of hours on a Sunday to get ahead. For example, you can easily batch cook a larger quantity of baked chicken thigh or hard-boil a dozen eggs for the week. Preparing your grains, like brown rice or yellow turmeric rice, in advance saves a ton of time during busy weekdays. I also like to chop up veggies like broccoli and wash greens such as arugula and spring mix so they’re ready to go. When it comes to things like tuna salad, making a bigger batch means you can quickly scoop it onto greens or toast for a fast lunch. Don't be afraid to customize these recipes to your taste or what you have on hand. For the high protein chicken bowl, try adding different roasted vegetables like bell peppers or zucchini, or swapping the brown rice for quinoa for a different texture. If you're making shrimp spring rolls, you could easily add baked tofu or more crunchy veggies like jicama.
