Spring Mixed Berry Sauce 🍓🫐
@Lemon8 Food this was a great addition to my matcha cravings. It’s a mix of strawberry, blueberry, and raspberry mixed together to give the Chantilly berry cake flavor that was all over the web last summer. Is this a combo you would add to your matcha 🤔❤️?
Ingredients:
1/2 cup strawberries
1/2 cup blueberries
1/2 cup raspberries
1 cup sugar
1 cup water
1 tsp vanilla extract
Prepare:
I blend my berries together first in my blender.
Then add everything together in a saucepan and allow to simmer for 5-10 minutes depending on how thick you’d like your syrup to be.
Remove from heat and add a teaspoon of vanilla extract if you’d like.
Allow to cool and store in fridge for up to 1-2 weeks 😒.

This spring mixed berry sauce is such a versatile and delightful addition to many treats beyond just matcha drinks. I personally love preparing this sauce in bulk and keeping it refrigerated; it lasts well for about one to two weeks, making it a convenient option for quick flavor boosts. The blend of strawberries, blueberries, and raspberries gives it a naturally sweet yet slightly tart profile, which balances perfectly with the vanilla extract. I often use this berry sauce as a topping for pancakes, waffles, and even vanilla ice cream, transforming simple desserts into something special. Another tip is to adjust the simmering time according to your preference—longer simmering results in a thicker syrup-like consistency, while a shorter cook time keeps it more like a fresh fruit compote. What’s great about this recipe is its simplicity—using just five ingredients—and the fact that you can tailor the sweetness by reducing or increasing the sugar amount. Fresh berries are the best choice, but frozen berries also work well if fresh ones aren't in season, just make sure to thaw and drain excess liquid first. Additionally, this sauce pairs wonderfully with cheese plates, especially soft cheeses like brie or cream cheese, adding a lovely fruity flair to savory bites. If you’re into beverages, adding this sauce to sparkling water or cocktails can create unique, spring-inspired flavors. In my experience, the homemade berry sauce is far superior to store-bought versions due to its fresh taste and customizable sweetness. Plus, making it yourself means no preservatives or artificial flavors. Overall, it’s a must-try for anyone looking to add a fresh, fruity touch to their spring recipes and matcha treats alike.
