Grilled Applewood Porckchop & Fresh Sweet Corn 🌽

@Lemon8 Food the weather in Florida has been really nice lately. Therefore, I broke out the grill and threw on some juicy pork chops and fresh sweet corn.

For the pork chops I used a brine before grilling. I’ll share that recipe below:

Ingredients:

2 cups chicken stock

¼ cup kosher salt

¼ cup brown sugar

2 teaspoons black peppercorns, cracked

4-6 cloves garlic

2 bay leaves

2 sprigs thyme

1 orange, sliced

2 cups ice water

4 pork chops (rib chops are the most tender)

(Simply double the recipe for larger servings)

Instructions:

Heat the chicken broth in a large pot. Add the salt, sugar, cracked peppercorn, and garlic and stir until the salt and sugar dissolve.

Add the bay leaves, thyme, and orange slices. Stir in 2 cups of ice water.

Make sure your pork chop is cleaned.

Place the pork chops in the pot, making sure they're submerged in the brine mix.

Cover the pot or container with a lid.

Place the pork to brine in the fridge for 1-3 hours.

Remove the pork chops from the brine, then pat dry before grilling.

You can baste the pork chops with a sauce while grilling for extra flavor.

One tip for the pork chops is to pat them completely dry after removing from the brine, as excess moisture can cause flare-ups on the grill and prevent good searing. I usually baste the chops with a homemade barbecue sauce or even a simple mix of olive oil, garlic, and a bit of honey to enhance the caramelization and flavor. Grilling outdoors on a nice day, like those lovely Florida evenings mentioned, truly elevates the experience.
