SUMMER SALADS > 🍑🍅🧀

This is an easy summer salad to whip up as a side dish, appetizer or even lunch/dinner (just add protein and you’re set!) 😍 no cooking required, just using the best summer produce to make the perfect salad 🍑

No salad is complete without cheese 🧀 in this salad I’m using burrata which is the PERFECT summer cheese. It’s light, creamy and oozes a rich cheese in the center when opened up.

What you’ll need:

🍑 2 peaches

🍑 2 roma/heriloom tomatoes or 1 cup cherry tomatoes

🍑 fresh basil leaves

🍑 1 fresh burrata ball

🍑 salted pistachios

🍑 drizzle of honey

Dressing:

🍅 2 tbsp olive oil

🍅 1 tbsp red wine vinegar or balsamic

🍅 1 tsp freshly chopped basil

🍅 squeeze of lemon juice

🍅 salt & pepper to taste

Chop up your stone fruit roughly and add to a bowl. Mix together your dressing and pour it over the tomatoes and peaches. Add them to a dish and top with burrata cheese, basil leaves and pistachios. Add on a drizzle of honey if you’d like a hint of sweetness OR balsamic glaze if you’d like it more savory 🍅
