Marinated olives are a fantastic appetizer that always impress guests with minimal effort. I love using Castelvetrano olives because of their mild, buttery flavor that complements the brightness of citrus zest perfectly. The addition of orange peel adds a fresh, aromatic twist, enhancing the olives with subtle sweetness and a bit of tang—something that truly elevates the dish beyond ordinary olives. When I make this appetizer, I usually let the olives soak in the marinade for at least 30 minutes, but leaving them longer, even overnight in the fridge, intensifies the flavors wonderfully. The olive oil, minced garlic, and rosemary sprigs infuse a savory depth, while the optional red pepper flakes can add just the right amount of heat if you like a little spice. Folding in the creamy Havarti cheese cubes right before serving balances the salty and tangy notes with smooth richness. I find Havarti to be the perfect cheese companion because it melts softly in your mouth without overpowering the marinade’s vibrant citrus qualities. Serving this with toasted bread or crunchy crackers is ideal, as it provides a pleasing texture contrast and makes a great vehicle for the olives and cheese. This appetizer is always a hit at social gatherings—whether for a casual wine night or a more formal dinner party. In my experience, the simplicity of this recipe makes it approachable for any skill level, and it can be easily customized by experimenting with fresh herbs like thyme or basil. Also, swapping out orange peel for lemon or grapefruit zest offers exciting flavor variations. If you enjoy light, colorful appetizers with complex flavors and minimal prep, give this citrus marinated olives and Havarti cheese recipe a try—you’ll likely find it becoming a go-to favorite for entertaining!
