Jerk Chicken Sweet Plantain Boats (Canoas)
Jerk Chicken & Cheese-Stuffed Plantain Boats
Experience a fusion of flavors with these Cheese & Ground Jerk Chicken Stuffed Sweet Plantain Boats. The natural sweetness of ripe plantains perfectly complements the spicy, smoky jerk chicken, all while being topped with melted cheese. Serve alone or over a bed of coconut rice.

Ingredients
* 2 large ripe sweet plantains
* 1 lb ground jerk chicken
* Sliced provolone
* Mozzarella Cheese
* 1 tablespoon olive oil
* 1 small onion, chopped
* 2 cloves garlic, minced or garlic paste
* 1/2 Serrano pepper, diced (optional)
* Walkerswood Jerk seasoning (to taste)
* Eatons All purpose Jamaican seasoning (to taste)
* Cooked coconut rice
* Pineapple salsa & glaze for topping (optional)
Steps
1. Preheat your oven to 400°F
2. Prepare plantains: cut edges off, peel.
3. Lightly fry the plantains on each side until yellow (3-5 minutes)- depending on ripeness. Remove from oil and let sit for a sec to drain oil and cool.
4. Prepare your meat mixture. Add chicken to bowl, add seasonings and mix.
5. In a skillet, heat olive oil over medium heat and add onion & garlic cooking until translucent.
6. Add ground jerk chicken, cook until the chicken is browned and cooked through.
7. Cut the sweet plantains in half lengthwise , leaving ends intact as to form a “boat”. Scrape the insides with a fork to basically flatten the flesh
8. Add provolone, followed by coconut rice if using.
9. Scoop the jerk chicken filling into the plantain boats, packing them generously.
10. Top each stuffed plantain with mozzarella cheese. Add diced peppers on top if using
11. Place the boats on a baking sheet and bake for about 10-12 minutes or until the cheese is melted and bubbly.
12. Remove from the oven and let cool for a few minutes before garnishing with pineapple salsa(if using). Serve hot alone or over a bed of coconut rice. Enjoy!
