Grilled Salmon with Mango Salsa & Coconut Rice 🍋🌴

A vibrant and refreshing dish with tropical flavors—perfect for a weeknight dinner or a summer gathering!

Ingredients:

For the Salmon:

4 (6 oz) salmon fillets

1 tbsp olive oil

½ tsp paprika

¼ tsp garlic powder

¼ tsp onion powder

Salt and pepper, to taste

For the Mango Salsa:

1 ripe mango, diced

½ red onion, finely chopped

¼ cup fresh cilantro, chopped

Juice of 1 lime

½ tsp chili powder

Salt and pepper, to taste

For the Coconut Rice:

1 cup jasmine rice

1 ½ cups coconut milk

1 ½ cups coconut water

½ tsp salt

Instructions:

1️⃣ Prepare the Salmon:

Drizzle the salmon fillets with olive oil and season with salt, pepper, paprika, garlic powder, and onion powder.

2️⃣ Grill the Salmon:

Preheat the grill to medium-high heat. Grill the salmon for 4-6 minutes per side, or until the fish is fully cooked and flakes easily with a fork.

3️⃣ Make the Mango Salsa:

In a medium bowl, combine diced mango, red onion, chopped cilantro, lime juice, chili powder, salt, and pepper. Mix well and set aside.

4️⃣ Cook the Coconut Rice:

In a medium saucepan, combine jasmine rice, coconut milk, coconut water, and salt. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the liquid is fully absorbed. Fluff the rice with a fork before serving.

5️⃣ Serve:

Plate the grilled salmon over a bed of coconut rice and top generously with the mango salsa. Garnish with additional cilantro if desired.
