Hotdog Cart Onion Sauce

1 thinly sliced onion
1 tbsp olive oil
3 cloves minced garlic
2 tsp of both salt & pepper
1/4 cup ketchup
1/3 cup water
Pinch of cinnamon (optional)

Thinly slice onions and add them to a pot with the olive oil. Season with salt, pepper, and add in garlic. Cook over medium heat for 10 minutes, stirring often, when onions begin to turn translucent, add in ketchup, water and cinnamon. Cook until liquid has reduced by more than half, about 15 minutes. Allow to cool before serving, store extras in the refrigerator. Use for hotdogs, burgers, and more!
