Noodles so good
Hey noodle lovers! You know that feeling when you just need something warm, comforting, and utterly delicious? For me, it's always noodles! I've been experimenting with so many different 'noodle recipes' lately, and I've found a few go-to's that are not only incredibly tasty but also super quick to whip up. If you're looking to elevate your weeknight meals without spending hours in the kitchen, you've come to the right place. I'm excited to share some of my absolute favorite easy noodle recipes that I make on repeat. First up, let's talk about a classic: The Quick Veggie & Chicken Noodle Stir-fry. This recipe is a lifesaver on busy evenings because it's so versatile. You can literally use whatever veggies you have in your fridge! Ingredients: 2 blocks instant noodles (discard seasoning packet or save for another use) or 200g of your favorite fresh noodles 1 tbsp sesame oil 1 chicken breast, thinly sliced (or tofu for a vegetarian option) 1 cup mixed stir-fry vegetables (bell peppers, carrots, broccoli, snap peas) 2 cloves garlic, minced 1 inch ginger, grated For the Sauce: 2 tbsp soy sauce, 1 tbsp oyster sauce (optional), 1 tbsp rice vinegar, 1 tsp sugar, 1/2 tsp cornstarch mixed with 2 tbsp water. Instructions: Cook your noodles according to package directions. Drain and set aside. I like to rinse mine with cold water to prevent sticking, then drizzle with a tiny bit of sesame oil. Heat sesame oil in a large pan or wok over medium-high heat. Add chicken (or tofu) and stir-fry until cooked through. Remove from pan and set aside. Add garlic and ginger to the pan, stir-fry for 30 seconds until fragrant. Add your mixed vegetables and stir-fry for 3-5 minutes until crisp-tender. Return the chicken (or tofu) to the pan. Pour in the prepared sauce mixture and bring to a simmer, stirring until it thickens slightly. Add the cooked noodles to the pan and toss everything together until the noodles are well coated with the sauce. Serve immediately, garnished with sesame seeds or chopped green onions if you like! This stir-fry is such a crowd-pleaser and truly one of the easiest 'noodle recipes' to master. Next, for those days when you crave something rich and creamy, you absolutely have to try my Creamy Garlic Parmesan Noodles. It’s pure comfort food personified and surprisingly simple! Ingredients: 200g spaghetti or linguine 2 tbsp unsalted butter 4-5 cloves garlic, minced 1/2 cup heavy cream (or half-and-half for a lighter version) 1/2 cup pasta water (reserved from cooking noodles) 1/2 cup grated Parmesan cheese, plus more for serving Salt and freshly ground black pepper to taste Fresh parsley, chopped, for garnish Instructions: Cook spaghetti according to package directions until al dente. Before draining, reserve about 1 cup of pasta water. Drain the rest. While the pasta cooks, melt butter in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it! Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, until it thickens slightly. Add the cooked spaghetti to the skillet. Pour in about 1/2 cup of the reserved pasta water. Stir in the Parmesan cheese until it melts and creates a smooth, creamy sauce that coats the noodles. If the sauce is too thick, add a little more pasta water until it reaches your desired consistency. Season with salt and pepper to taste. Garnish with fresh parsley and extra Parmesan before serving.
