One Pot White Bean Kale Soup🥣 🫘

is so easy to make, nutritious and tasty. White bean kale soup has been one of my go to recipes over the past 6 years so I’m glad to finally share the recipe with you. The zing from the lemon and tarragon along with the fat from the olive oil pairs so well.

- White Bean Kale Soup -

Ingredients:

1 & 1/2 large carrots

1 russet potato

3 Cups kale

3/4 large white onion

5 garlic cloves

1/8 Cup olive oil

4 Cups vegetable broth

2 cans white beans

Juice of 1 lemon

1 Tsp lemon zest

1/4 Cup white vinegar

Pinch white pepper

1 Tsp ground Sage

2 Tbsps fresh Tarragon

Step 1)

Chop the vegetables into large pieces, shred the kale and mince the garlic.

Step 2)

To a large pot add the olive oil, onion and garlic on medium/low heat. Cook until translucent and fragrant.

Step 3)

Add all of the rest of the ingredients except the kale and cook for 20 minutes on a simmer. I suggest covering the pan. Add the kale last 5 minutes so it doesn’t over cook.
