Roasted Garlic & Herb Baked Leg Quarters:

Ingredients:

• 2 garlic cloves, minced

• 1 tablespoon olive oil

• 1 teaspoon garlic pepper seasoning

• 1 teaspoon Zatarain’s seasoning

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1 teaspoon ground coriander

• 1 teaspoon smoked paprika

• 1 teaspoon dried parsley

• 5 chicken leg quarters

• 1 large yellow onion, sliced

• 2 sweet orange peppers, sliced

Instructions:

1. Preheat Oven: Preheat your oven to 400°F .

2. Prepare the Seasoning Mix: In a small bowl, combine the minced garlic, olive oil, garlic pepper seasoning, Zatarain’s seasoning, garlic powder, onion powder, ground coriander, smoked paprika, and dried parsley. Mix well to create a paste.

3. Season the Chicken: Pat the chicken leg quarters dry with paper towels. Rub the seasoning paste all over the chicken, ensuring they are well coated on all sides.

4. Prepare the Vegetables: Slice the yellow onion and peppers.

5. Arrange in Baking Dish: Place the onions and peppers on top of the seasoned chicken leg quarters all over.

6. Bake: Bake in the preheated oven for 45-50 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is crispy and golden brown. The vegetables should be tender and slightly caramelized.
