Beyond just making your fish perfectly moist and infusing it with that unique aroma, they also make cleanup a breeze! The leaves act as a natural parchment paper, locking in all the juices and seasonings. It’s a trick I picked up from a friend who loves experimenting with global cuisines, and honestly, it’s become one of my favorite ways to cook fish. Finding banana leaves might seem tricky, but it's easier than you think. As I mentioned, many Latin or Asian grocery stores carry them, usually in the produce or frozen section. When you get them home, they might be a bit stiff. My little secret for making them pliable and easy to work with is to quickly run them over a low flame on your stovetop or dip them in hot water for a few seconds.
