Cinnamon Honey Butter Sweet Potato Cornbread
Ingredients
1 cup all-purpose flour
1 cup cornmeal
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup mashed sweet potato (about 1 medium sweet potato)
1/2 cup unsalted butter, melted
1/2 cup honey
1/2 cup buttermilk
2 large eggs
For the Cinnamon Honey Butter:
1/4 cup unsalted butter, softened
2 tbsp honey
1/2 tsp ground cinnamon
Directions
Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or line it with parchment paper.
In a large bowl, whisk together the flour, cornmeal, baking powder, salt, cinnamon, and nutmeg.
In a separate bowl, combine the mashed sweet potato, melted butter, honey, buttermilk, and eggs. Stir until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
While the cornbread is baking, prepare the cinnamon honey butter by mixing the softened butter, honey, and cinnamon in a small bowl.
Once the cornbread is done, remove it from the oven and let it cool for a few minutes. Serve warm with the cinnamon honey butter.
