A Creamy, Cozy Recipe for Fall/Winter 🥰☃️❄️🍂

This recipe came about from having random items in my pantry and no idea what to do with them! Bought some spinach for extra ~nutrients~ and voila! A cozy, fall-y/wintery recipe for the cold months ahead 🥰

Ingredients ✨

🍗 Skin on/bone in Chicken thighs

🌿 1 pack or bundle spinach

🧅 1 onion

🧄 3-4 cloves garlic

🍚 1 cup wild rice

✨ 1 cup bone broth

🥥 1 can coconut milk

🍅 1 small can tomato paste

🍛 2 tbs Indian or curry seasoning (plus some extra for the chicken)

🧂 The Basics: Salt/pepper/olive oil for cooking seasoning

1. Season the chicken with salt, pepper, olive oil, and Indian seasoning to taste. Cook in pot on medium-high heat until skin is crispy & set aside (it will finish cooking later).

2. Add olive oil drizzle to same pan chicken was cooked in, and add in onion, cooking 5-7min or until mostly clear. Add in spinach, garlic & salt/pepper/Indian seasoning, and cook until wilted down.

3. Add in tomato paste, cooking 2min or so to help cook down some of the sharp/tart taste

4. Add in broth and coconut oil, bring to a simmer

5. Add in rice, and add chicken back in.

6. Bring to a soft boil, turn heat to low, cover and cook until rice is cooked.
