Sometimes I’ll even add a pinch of smoked paprika for an extra layer of flavor. It's crucial to pat your catfish fillets dry before you season them; this helps the spices adhere better and ensures you get that beautiful golden-brown crust later on. I generously rub the seasoning all over both sides of the fillets, making sure every inch is covered. This step is key for a truly flavorful dish. For grilling, I preheat my grill to medium-high heat and lightly oil the grates to prevent sticking. I place the seasoned catfish fillets directly on the grill and cook for about 4-6 minutes per side, depending on their thickness, until they are opaque and flake easily with a fork. The grill marks add such a lovely presentation, and the smoky flavor is just unbeatable. I often serve these golden-brown beauties on a bed of fluffy rice or grains, just like in the picture, sometimes adding a squeeze of fresh lemon and a sprinkle of fresh green herbs like parsley or cilantro for brightness.
