It transforms a simple country loaf into something truly special, perfect for serving alongside pasta, dipping into a robust olive oil, or crafting the most amazing sandwiches. So, what makes this sourdough Italian bread so good? It's the combination of that distinct sourdough tang with aromatic dried Italian herbs like oregano, basil, thyme, and a touch of garlic powder. This blend elevates the flavor profile, making each slice burst with Mediterranean zest. Plus, the slow fermentation process of sourdough not only gives it that characteristic bubbly texture and crisp crust but also makes it easier to digest for many people. Let me walk you through my simplified process for making this delicious bread. First, you'll need an active sourdough starter. Mine is named 'Bubbles,' and she's usually fed and bubbly, ready to double in size within 4-6 hours. If your starter isn't active, give it a feed and wait until it's super vigorous before you begin. Believe me, an active starter is the secret to a great rise! My Simple Steps to Sourdough Italian Herb Perfection: The Autolyse (The Hydration Start): I always start by mixing just the flour and water. This step, called autolyse, allows the flour to fully hydrate and the gluten to start developing on its own, making the dough much easier to work with later. Let it rest for 30 minutes to an hour. Adding the Good Stuff: After the autolyse, I mix in the active sourdough starter, salt, and my blend of Italian herbs. Sometimes I'll add a pinch of red pepper flakes for a little kick! I gently fold everything together until well combined. Don't worry if it looks shaggy; it'll come together.
