2 tbsp sugar
Cheesecake filling:
3 blocks cream cheese (680g, softened)
3/4 cup sugar (150g)
3 eggs
1 tsp vanilla extract
1/2 cup sour cream (120g)
Peach cobbler topping:
4–5 peaches (sliced) or 2 cans peaches (drained)
1/3 cup brown sugar
1 tsp cinnamon
1 tbsp butter
1 tsp vanilla extract
1 tbsp cornstarch + 2 tbsp water (slurry)
Crumble topping (optional but viral):
1/2 cup flour
1/4 cup brown sugar
1/4 cup cold butter

1. Make crust
Mix graham crumbs, melted butter, sugar
Press into springform pan
Bake at 350°F (175°C) for 8–10 min
2. Cheesecake filling
Beat cream cheese until smooth
Add sugar, mix
Add eggs one at a time
Stir in vanilla + sour cream
Pour over crust
3. Bake cheesecake
Bake at 325°F (160°C) for 55–65 min
Center should be slightly jiggly
Chill at least 4 hours or overnight
4. Peach topping
Cook peaches with butter, brown sugar, cinnamon, vanilla
Add cornstarch slurry to thicken
Simmer until glossy and syrupy
5. Crumble (optional)
Mix flour, sugar, butter until crumbly
Bake at 350°F for 10–12 min until golden
6. Assemble
Spoon warm peach topping over chilled cheesecake
Add crumble on top
