Lately, I've been experimenting with ground chicken, and let me tell you, it opens up a world of possibilities for quick and easy dinners. For a super simple ground chicken and mashed potato meal, I love making a 'deconstructed shepherd's pie'. Just brown some ground chicken with diced veggies like carrots and peas, season it well with herbs like thyme and rosemary, and serve it topped with creamy mashed potatoes. It’s hearty, satisfying, and comes together in about 30 minutes! Another favorite is ground chicken patties served with a dollop of mash and a rich pan gravy – it's like a homemade Salisbury steak but often lighter and quicker to prepare. When thinking about what goes well with chicken and mashed potatoes, I always aim for balance in flavors and textures. A vibrant green vegetable is a must for me – steamed broccoli florets, sautéed green beans with garlic, or even a simple side salad with a light vinaigrette. For extra flavor and moisture, a rich pan gravy made from the chicken drippings or a creamy mushroom sauce elevates the dish without much effort. Sometimes, I even add a side of roasted root vegetables like carrots and parsnips for a touch of sweetness and earthiness that complements the savory chicken and potatoes beautifully. And who doesn't love leftovers? The best part about making a delicious chicken and mashed potato dinner is transforming them into entirely new meals. My absolute favorite thing to do with leftover mashed potatoes is to make crispy potato cakes!
