Low Carb Chocolate Peanut Butter Raspberries

Making a healthier version of Tru Fru at home is so easy and I love storing these in a ziplock bag in the freezer for a quick snack when I’m craving chocolate. You only need 3 ingredients to put these together. I use Lilly’s chocolate chips because it’s my favorite no sugar added chocolate. For the peanut butter, I find that Costco brand is the best as far as having zero added sugar as well. The peanut butter is a bit more runny than other peanut butter brands (you have to mix it well!) but you can put the bag of peanut butter in the fridge for 30 minutes to get it to hold better. Other options are peanut butter powder.. the result is more like a peanut butter mousse but it has a tad bit of added sugar to it.

Chocolate peanut butter raspberries

About 24 raspberries (carefully washed and dried)

1/2 cup low carb zero sugar chocolate chips (I used Lilly’s dark chocolate chips)

1/4 cup of low sugar peanut butter (I used Costco brand Kirklands creamy peanut butter)

To assemble:

Gently wash and dry raspberries. I got about 24 good raspberries out of my container.

Put peanut butter into small ziplock bag. Put in fridge for 30 minutes to prevent the peanut butter from being too runny.

Take bag of peanut butter out of the fridge and snip a small portion of the tip of the ziplock bag.

Fill the raspberries with the peanut butter and place on parchment paper. Once all of the raspberries are filled, transfer to the fridge for about 15 min.

Melt the chocolate chips in the microwave in 15-20 second increments until it’s smooth and completely melted. Do not overheat the chocolate it will burn!

Take raspberries out of the fridge and gently dip them in the chocolate. Place them back on the parchment paper.

Once all of the raspberries are covered in chocolate, place back in the fridge for 15 min. The chocolate will harden and set.

You can store these in a ziplock bag. I keep mine in the freezer to keep them fresh. #lowcarb #chocolate #sweettreats #pcos #healthysnacks
