This is my version of a healthy Girl Scout cookie dupe. If you love the Samoas Girl Scout cookies you have to make these! It only takes 5 simple ingredients and comes together in 15 minutes. The almond butter and coconut provides healthy fats and fiber to balance your blood sugar while still feeling like you are having an indulgent treat.

Using allulose as a sweetener keeps the sugar content extremely low, which is perfect if you're watching your blood sugar or following a ketogenic diet. One tip I found helpful is to slice the apples evenly so that every ring bakes or sets uniformly when layering the coconut mixture. Removing the apple cores with a small tool or even a clean bottle cap works wonders for creating the perfect doughnut shape reminiscent of the original Samoas cookie. For the chocolate drizzle, melting no sugar added semi-sweet chocolate chips with a little butter not only smooths the chocolate but also gives it a glossy finish when hardened. I liked using a piping bag (or a Ziploc bag with a small corner cut off) to apply the chocolate stripes evenly, making the treats look bakery-quality. Refrigerating them for a few minutes after assembly helps the chocolate set nicely, and the combination of crunchy apple, creamy almond butter, and chewy coconut texture is delightful.
