Ingredients:
▢ 3 zucchini (about 7" long)
▢ 1 lb ground beef
▢ 2.5 cups marinara sauce
▢ 1 cup part-skim ricotta cheese
▢ ½ cup grated Parmesan + 1 tbsp for topping
▢ 1 cup shredded mozzarella cheese
▢ 1 large egg, beaten
▢ 1 tbsp fresh parsley, chopped
▢ ¼ tsp Italian seasoning
▢ ¼ tsp garlic powder
▢ ¼ tsp onion powder
▢ ½ tsp salt
Instructions:
1️⃣ Brown ground beef, add 2 cups marinara + spices and simmer 15 min
2️⃣ Mix ricotta, ½ cup Parmesan, egg + parsley — set aside
3️⃣ Halve zucchini lengthwise and scoop out the centers
4️⃣ Spread ½ cup marinara in a 9x13 baking dish and add zucchini boats
5️⃣ Fill each boat with the ricotta mixture
6️⃣ Top with meat sauce — work it in between the boats too
7️⃣ Dollop remaining ricotta on top + sprinkle with Parmesan
8️⃣ Cover with foil and bake at 400°F for 25 min
9️⃣ Remove foil, add mozzarella, bake 5 more min until bubbly
