Pumpkin Pecan Cobbler

Ingredients:

For the Cobbler…

-1 cup + 3 tbsp flour

-2 tsp baking powder

-1/2 tsp salt

-3/4 cup sugar

-1 tsp cinnamon

-1/2 tsp nutmeg

-1/2 tsp cloves

-1/2 cup pumpkin puree

-1/4 cup milk

-1/4 cup butter, melted

-1 1/2 tsp vanilla

For the topping…

-1/2 cup sugar

-1/2 cup brown sugar

-1/4 cup pecans, chopped

-1 1/2 cups boiling water

Directions:

1. Preheat oven to 350 degrees.

2. In a medium bowl, mix together flour, baking powder, salt, sugar, cinnamon, nutmeg, and clove.

3. In a separate bowl, combine the pumpkin puree, milk, melted butter, and vanilla.

4. Pour the wet ingredients into the dry ingredients and mix to form a thick batter.

5. Pour the batter into an 8 inch casserole dish.

6. For the topping, mix together sugar, brown sugar, and chopped pecans.

7. Sprinkle the sugar and pecan mixture evenly over the batter mixture.

8. Carefully pour the boiling water over the entire dish without stirring.

9. Place the casserole dish on top of a baking sheet to catch any overflow. Bake the cobbler for 40 minutes or until the middle is set.

10. Let cool for 5-10 minutes then enjoy!
