The zucchini in my fridge finally fulfilled its purpose.

Ingredients:

✔️ 2 cups almond flour

✔️ ½ tsp kosher salt

✔️ ½ tsp cinnamon

✔️ ½ cup sugar-free sweetener

✔️ 1 tsp baking soda

✔️ 2 large eggs, beaten

✔️ ¼ cup melted butter

✔️ 1½ cups grated zucchini (squeezed dry)

Directions:

1️⃣ Preheat oven to 350°F and grease a 9x5 loaf pan.

2️⃣ Mix almond flour, salt, cinnamon, sweetener, and baking soda in a large bowl.

3️⃣ Squeeze excess moisture from the zucchini using a kitchen towel.

4️⃣ Add zucchini, eggs, and melted butter to the dry ingredients and mix until combined.

5️⃣ Pour into the prepared pan.

6️⃣ Bake 45–60 minutes, or until a toothpick comes out clean.

7️⃣ Cool completely before slicing.
