Easy Jerk Chicken
Sharing my easy version of one of my favorite dishes! I love the balance of sweet, savory, and spicy. The chicken is juicy and tender, and the ingredients combine to create a wonderful flavor. I keep the recipe easy by using common pantry spices and not requiring any chopping. This can be grilled, smoked, or baked.
I do not typically wash my chicken, but I know that culturally it is done often with African and Caribbean dishes. Therefore, I did it here for y’all too! Enjoy!
Ingredients:
-4 lbs of chicken thighs, bone in and skin on
-1/4 cup brown sugar
-1/4 cup soy sauce
-1/4 cup apple cider vinegar
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs smoked paprika
-1 tbs dried thyme
-2 tsp ground ginger
-2 tsp cayenne pepper
-2 tsp ground cumin
-2 tsp black pepper
-1 tsp ground allspice
-1 tsp ground cinnamon
-1 tsp salt
-1/2 tsp ground nutmeg
-3 tbs oil
-juice of 1 lime
-juice of 1 orange
Instructions:
-add the chicken to a bowl with the rest of the listed ingredients; mix well
-cover the bowl and marinate in the fridge for at least two hours but preferably overnight
-preheat grill or oven to 400F
-if cooking in an oven, bake for about 45 minutes
-if cooking on the grill, grill each side for about 6 to 8 minutes
-cook until internal temperature is 165F
-allow chicken to rest for 10 minutes
-enjoy!
