Instructions
Brownie batter:
• Melt butter over medium-low heat, stirring every 10–15 sec. It’ll foam, turn golden, and smell nutty (5–7 mins).
• Remove from heat, add chocolate + cocoa powder. Mix until smooth. Let cool slightly (warm, not hot).
• Whisk eggs + sugars until mostly dissolved ✨ (this gives that crinkly top).
• Add chocolate mixture + vanilla. Mix smooth.
• Add flour + salt. Mix just until combined. Do not overmix.
Cookie dough:
• Cream cold butter + sugars until slightly fluffy.
• Add egg, yolk + vanilla. Mix until combined.
• Add flour, baking powder, baking soda + salt. Mix gently.
• Fold in chocolate chips.
• Chill dough 30–60 mins for best texture.
⸻
Assemble:
• Line a muffin tray with cupcake liners.
• Add a layer of brownie batter.
• Spoon some cookie dough on top.
• Press in extra chocolate chunks if you want 😌
• Top with more brownie batter + small dollops of cookie dough for that classic brookie look.
⸻
Bake:

• Bake 25–30 mins — edges set, center still a little soft
• Let cool 30–40 mins before serving

If you've ever dreamed of combining the rich, fudgy texture of brownies with the chewy, buttery goodness of chocolate chip cookies, making chocolate lava brookie cups is the perfect way to satisfy that craving. One of the secrets to achieving the luscious gooey center is to closely follow the melting and mixing instructions, especially taking care not to overmix the brownie batter to avoid a cakey texture. Using room temperature eggs helps the batter blend smoothly, giving those signature crinkled tops once baked. I personally love to add an extra layer of chocolate chunks pressed into the cookie dough layer before baking. This little addition creates delightful bursts of melted chocolate in every bite that complement the gooey lava underneath. Also, chilling the cookie dough for at least 30 minutes before assembly really improves the dough's texture, preventing it from spreading too thin and allowing the brookie cups to hold their classic shape. Baking at 170°C with fan-assisted heat, as recommended, bakes the edges to a satisfying crisp while keeping the centers soft and molten. Letting the brookies cool for about 30–40 minutes is essential; it allows the lava center to set just enough so it won't spill but stays deliciously gooey when eaten. These brookie cups also make for an excellent party treat or a comforting homemade dessert. You can personalize your brookies by experimenting with different types of chocolate—dark, milk, or even white chocolate chips—each bringing a unique flavor profile. Overall, the combination of buttery, sweet cookie dough and rich, decadent brownie batter creates an indulgent treat worth the effort. Enjoying these warm freshly baked brookie cups with a scoop of vanilla ice cream or a dash of sea salt on top takes the dessert experience to the next level.
