Fish Cakes

1lb white fish- I used sheepshead

1/2 white onion

1/2 zucchini

1/2 red pepper

1 cup wheat germ or bread crumbs

S&P

2 tsp Itialian seasonings

2 eggs

2tbsp mayo

Boil fish until cooked, drain, pat dry and let cool.

Finley dice zucchini, peppers and onion. Add veggies to a pan with olive oil and sautee until soft

In a bowl, use a fork to shred cooled fish. Then add your seasoning, eggs, wheat germ, and sautéed veggies. Mix well

Creat your pattys and place on parchment paper. Heat a pan to medium heat and carefully place fish cake in pan with olive oil. They will be a little wet at this point so be careful to keep them intact.

Cook for 5-7 min or until browned on one side and then flip and repeat.

Throw them on a roll with some squeezed lemon, LTO and mayonnaise and they’re perfect 🤩

I use sheepshead bc their main diet is crab so they have a shellfish taste to the meat. And it’s what my husband stocks the freezer with 😊 Flounder would also be a great option!
