Monk fruit sweetener is another natural option that blends well in baking, with a 1:1 cup sugar equivalence for its granulated form. Pure monk fruit extract is stronger, so adjusting to taste is necessary. Sugar alcohols like erythritol and xylitol are popular for baking and cooking. Erythritol offers about 1% sweetness of sugar per cup and adds a cooling aftertaste; it’s less sweet but safe for humans.
