Dr Pepper Crockpot Pulled Pork
INGREDIENTS
Pork shoulder
Dr Pepper
Barbecue rub
Yellow mustard
Medium white onion
Brown Sugar
Barbeque sauce
DIRECTIONS
Prep your pork lather both sides with mustard and then sprinkle on your favorite barbecue seasoning.
In your crockpot begin by adding sliced onions to the bottom of the slow cooker. Then add your pork shoulder followed by Dr Pepper. You'll want to make sure that you have enough liquid so that half of the pork is submerged. Top with brown sugar and put the lid on.
I cooked mine low and slow for 7-8 hrs so it reached an internal temp of 200 to shred.
Once the pork is done, carefully remove it from the liquid and let it rest for a few minutes on a cutting board. Then grab a couple of forks and use them to pull it apart.
When your ready to dig in top with your favorite barbecue sauce and Munch!
Using Dr Pepper in this crockpot pulled pork recipe is a game changer for adding a unique sweetness and depth of flavor that pairs perfectly with the smoky barbecue rub and mustard. When I first tried this method, I was surprised at how the soda not only tenderized the pork during the long cooking process but also created a subtle caramelized taste once combined with the brown sugar and barbecue sauce. The key is to cook the pork low and slow—around 7 to 8 hours on low heat—until the internal temperature reaches about 200°F. This ensures the pork is tender enough to shred easily with a couple of forks. I like to layer thinly sliced white onions at the bottom of the crockpot before adding the pork because they impart a mild sweetness and absorb some of the cooking juices, adding more flavor and moisture to the final dish. The pork shoulder’s fat breaks down over time, blending with the soda and seasonings, producing a rich, juicy pulled pork that’s perfect for sandwiches, tacos, or even on its own with coleslaw. A personal tip: after shredding the pork, I strain some of the cooking liquid and drizzle it back into the meat before adding barbecue sauce. This keeps the pork moist and enhances the overall taste. Also, using yellow mustard as a binder for the rub helps the seasoning stick and adds an extra tangy contrast to the sweetness of the Dr Pepper and brown sugar. Overall, this Dr Pepper crockpot pulled pork is an easy-to-follow recipe that impresses guests without requiring hours of active cooking. Whether you’re meal prepping or preparing for a weekend gathering, this recipe delivers melt-in-your-mouth pulled pork with minimal effort and maximum flavor.
