If you enjoy experimenting with pizza toppings, this BBQ chicken pizza with pineapple is a fantastic choice that balances sweet, savory, and smoky flavors effortlessly. A great tip is to caramelize the onions slowly over low heat to unlock their natural sweetness, which complements the tangy BBQ sauce beautifully. Using a combination of mozzarella and Gouda cheese adds both stretch and a subtle smokiness, enhancing the overall taste. For the chicken, seasoning it with a blend of garlic powder, onion powder, chili powder, dried oregano, and a pinch of cumin elevates the flavor profile and gives it a gentle kick. You can bake this pizza on a pizza stone at a high temperature (around 475°F or 245°C) for a crisp crust and perfectly melted cheese. Adding fresh pineapple on top might be controversial for some, but the juicy sweetness pairs surprisingly well with the BBQ flavors and spicy chicken. Lastly, garnishing with fresh cilantro adds a pop of color and fresh herbaceous notes. This recipe is not only quick and straightforward but also versatile. Feel free to swap out ingredients to suit your preferences—for example, try smoked chicken or add jalapeños for extra heat. Making your own BBQ sauce can also personalize this pizza further. Overall, this pizza is a fantastic option for busy weeknights or casual get-togethers, offering a delicious twist on traditional chicken pizza with an island-inspired flair from the pineapple.
