Baked Potato Casserole
few ingredients, and easy to make! ready in a total of an hour!😋🥔
ingredients:
• 4 russet potatoes
• 6 slices, a pack 1/2in bacon
• 2 scallions
• nonstick cooking spray
• 1 tsp salt
• 1/2 tsp pepper
• 2 cups cheddar cheese
• 6oz cream cheese (room temp)
• 2/3 cup sour cream (I love it so I used more)

• preheat oven to 425 degrees, and spray a casserole dish with nonstick cooking spray. I bought a one use pan from walmart, since I don’t have a casserole dish at home!
• cook bacon in a medium, non stick skillet, until brown and crispy on each side. (6 to 7 minutes), then set aside 2 tbsp of bacon grease, to pour over the potatoes once cut. you can use as many strips of bacon that you prefer, since the bacon is just a topping!
• cut the potatoes into 1 inch cubes, and place them in the casserole, or pan, and sprinkle the 1 tsp of salt and 1/2 of pepper over the potatoes along with the 2 tbsp of bacon grease. roast in oven until potatoes are are soft and brown, about 45 minutes!
• while potatoes are cooking, mix together the cream cheese, and 1 cup of cheddar cheese in a bowl until combined. dollop over potatoes once done cooking, then sprinkle remaining cup of cheese, and bake until cheese is completely melted on top, and potatoes are fully cooked through when poked with a knife. 13-15 minutes.
• lastly, dollop or spread sour cream over the casserole, and cut up bacon into pieces to sprinkle on top. chop the scallions into pieces, white and green parts only, and sprinkle on top as well.
