Vegan Chickpea “Chicken” Salad ♡

♡ Ingredients: Chickpeas/ Garbanzo beans, celery, red onion, dill pickle, fresh dill, yellow mustard, dijon mustard, plant based mayonnaise, lemon juice, black pepper, adobo seasoning, garlic powder, and onion powder

♡ Soak chickpeas overnight

♡ Add drained chickpeas to food processor and season with black pepper, adobo seasoning, garlic powder, and onion powder

♡ Add lemon juice to your chickpeas

♡ Pulse/ chop until your desired consistency or smash with a fork

♡ Transfer to a separate bowl and add in diced celery, diced red onion, diced dill pickle, and fresh dill

♡ Add in yellow mustard, dijon mustard, plant based mayonnaise, season to your liking and mix thoroughly

♡ Serve with crackers, as a sandwich, or whatever your heart desires
