This Mediterranean Chickpea Salad that is both simple to prepare and bursting with flavor. This salad features fresh ingredients like cherry tomatoes, crisp cucumbers, feta cheese, and red onions, combined with protein-rich chickpeas. The vibrant colors make it visually appealing, while the combination of textures enhances the overall experience.

—Ingredients—

Half a red onion

4 mini cucumbers

1 cup Kalamata olives

1 cup cherry tomatoes

1 15.5 can chickpeas (drained and rinsed)

1 block of feta cheese (or as much as you like)

1/4 cup chopped parsley

—Dressing Ingredients—

1/3 cup extra virgin olive oil

1 tablespoon rice vinegar

Juice of 1 lemon

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1. To start, prep the dressing by combining all the ingredients in a mason jar. Just shake it up until everything is well mixed.

2. Next, chop all the veggies, olives, and feta cheese into roughly the same size pieces. Don’t forget to chop the parsley finely.

3. Drain and rinse a can of chickpeas.

4. Finally, in a large bowl, combine all your chopped ingredients and pour the dressing on top. Mix everything well and enjoy!
