The Breakfast Casserole You Make the Night Before👀
The breakfast casserole you make the night before so you have nothing to do in the morning.☕️
Layer it. Cover it. Refrigerate overnight. Bake in the morning. Your future self will thank you. 🥣
Ingredients:
- 1 loaf bread of your choice
- 1 stick butter
- 1 lb pork sausage cooked and drained
- 2 cups shredded cheddar cheese
- 6 eggs
- 3 cups milk
- 1 tsp salt
Instructions:
Crumble and brown sausage. Drain.
Spray a 13x9 dish. Lay bread slices to cover the bottom and fill any gaps. Put a pat of butter on top of each slice.
Sprinkle half the cheese and half the sausage over the bread. Repeat with another layer of bread, butter, cheese, and sausage.
Beat eggs, milk, and salt together and pour evenly over everything. You may need a little extra milk depending on your bread.
Press down with a spatula until the milk seeps through the bread.
Cover and refrigerate overnight.
In the morning bake uncovered at 350 degrees for 45 to 55 minutes until puffed and golden brown.

Making a breakfast casserole the night before has truly transformed my mornings. By layering bread, cooked sausage, cheddar cheese, and an egg-milk mixture, then refrigerating it overnight, the casserole soaks up all those flavors beautifully. I find that pressing down the mixture with a spatula before covering it helps the custard seep evenly through the bread, creating a soft, rich texture once baked. One tip I learned is to consider the type of bread you use: denser breads like brioche or challah absorb the custard well but may require a bit more milk to stay moist; lighter breads may soak too quickly, so keep an eye on the consistency when pouring the egg mixture. This dish is incredibly versatile. You can swap the pork sausage for breakfast ham, bacon, or even a vegetarian sausage alternative. Adding veggies like sautéed mushrooms, spinach, or bell peppers can also boost the nutrition and flavor. From experience, sprinkling a little extra cheese on top before baking yields a wonderfully golden, bubbly crust. Baking at 350°F for about 50 minutes produces a casserole that's puffed, golden, and fully set. It’s excellent for feeding a crowd or prepping for busy weekday mornings. Leftovers reheat well in the microwave or oven, making it a great option for meal prep. Overall, this overnight breakfast casserole is a game-changer for anyone seeking an easy, hearty breakfast without the morning rush. It’s comforting, filling, and delicious—definitely a staple I’ll be making regularly.
