A Haitian classic — slow-cooked meats and crab in a rich, silky okra sauce, served over soft tomtom/fufu made from breadfruit or plantain. Full of flavor, tradition, and soul.

🍖 Ingredients

Meat & Sauce

• 1 lb oxtail, cleaned with lime or vinegar

• 1 lb beef ribs, cut into pieces

• 1 lb cow feet, cleaned and chopped

• 2 whole blue crabs, cleaned and cracked

• ½ cup sour orange juice (or mix of lime + orange juice)

• 2 tbsp Haitian epis

• 1 tbsp tomato paste

• 2 tbsp oil

• 10–12 fresh okra, trimmed (tips and heads removed)

• 1 jalapeño pepper, poked with 4–5 cloves (piman klou)

• 1 scotch bonnet pepper, left whole (optional for heat)

• 1 thyme sprig + small bunch parsley, tied together (bouquet garni)

• 2 maggi cubes or 2 tsp bouillon powder

• 1 tsp paprika

• 1 tsp onion powder

• 1 tsp garlic powder

• Salt & black pepper to taste

• 1 tbsp butter (optional)

• 4–5 cups water or broth

Tomtom

Option 1 – Breadfruit:

• 1 large breadfruit, peeled, cored, and cut into chunks

Option 2 – Tropiway Fufu Flour:

• 1 pack Tropiway Fufu Flour (breadfruit flavor preferred)

Plus:

• 1 tbsp butter or olive oil

• Salt to taste

• Water
