Last year I made a pumpkin version of these sandwich cookies and all I kept thinking was how good a carrot cake version would be. So I made brown butter carrot cake oatmeal cream pies with a brown butter filling 🥕 so I *think* the recipe I used was from the Olive and mango website. Full disclosure I made these a few weeks ago and I bake a LOT so it’s sometimes hard to remember or keep track of everything I’ve made.
