I have been wanting to make these for so long. I’m not sure why I put them off for so long since they were really easy to throw together.
Robins egg peanut butter cups
- 6 tbsp softened butter
- 1 cup creamy peanut butter
- 1-2 cups powdered sugar
- Splash vanilla extract
- Pinch salt
- melted white chocolate + light blue candy melts
- 1 tsp baking cocoa
- 1 tbsp water
Cream butter then add peanut butter and mix until combined. Add in powdered sugar starting with 1 cup and add more as needed. Mix until smooth. Mixture should be soft and easy to handle. Add more powdered sugar if needed. Then mix in vanilla and salt. Portion into egg molds or shape into eggs by hand. Freeze for at least an hour. Melt chocolate. If it’s too thick add some oil to thin it out. Dip eggs into the chocolate then freeze again until set. Mix baking cocoa and water and use a brush to flick specks onto the eggs. Freeze again until set and dry.
