It's so wonderful to see our little ones enjoy their meals, just like my little one with her peaches, mixed veggies, and pesto pasta! One of the biggest joys (and sometimes challenges!) of #momlife is making sure they're getting all the good stuff. I've learned a few things along the way that might help you too, especially when it comes to feeding a 1-year-old. When I prepare a meal like the one I shared – with the vibrant peaches, colorful mixed veggies, and comforting pesto pasta – I'm always thinking about both nutrition and appeal. Peaches are fantastic for toddlers; their natural sweetness often makes them a hit, and they're packed with vitamins and fiber. I usually offer them fresh and diced into small, manageable pieces. Sometimes, if they're extra ripe, I'll lightly mash them or blend them into a smoothie for a different texture. Mixed veggies are another staple. It can be tricky getting toddlers to eat their greens, but consistency is key! I often steam or lightly sauté them until they're soft enough for little gums to handle. Broccoli florets, diced carrots, peas, and green beans are all great choices. I try to offer a variety and usually put a small portion on her plate to start. Even if she doesn't eat much one day, I know exposure helps. Sometimes, I'll mix them into sauces or hidden purees, but I also make sure she sees and touches the actual vegetables. It’s all part of the discovery! Pesto pasta is a real winner in our house! It’s quick, easy, and usually a hit. I opt for whole wheat pasta for extra fiber, and a good quality pesto (or homemade if I have time!) can pack in some healthy fats and greens like basil. Before serving, I cut the pasta into smaller, bite-sized pieces to prevent choking, especially for a 1-year-old. It's amazing to watch her independently slurp up those pasta strands! Beyond 'what I gave her' and 'what she ate,' I've found a few practical tips make mealtime smoother. First, involve them! Even little ones can 'help' by picking out a fruit or vegetable at the store, or watching you prepare their food. This builds curiosity. Second, don't stress too much about them cleaning their plate. Toddlers have varying appetites. Focus on offering balanced options throughout the day. If they don't eat much at one meal, they might make up for it at the next. Another tip is to offer food in fun ways. Sometimes, cookie cutters can turn sandwiches or fruit slices into exciting shapes. Or, simply arranging the food colorfully on the plate, as I did with the peaches and veggies, can spark their interest. We also keep mealtime a positive experience, avoiding power struggles. If she rejects something, I just say, 'Okay, maybe next time!' and move on. For other easy toddler-approved meal ideas, I often rotate through things like scrambled eggs with spinach, mini whole-grain pancakes with fruit, lentil soup (mashed up), or small portions of chicken and sweet potato.
