福井で「ニジハコ 福井」「ニジハコカフェ（にじはこカフェ）」を調べている人に向けて、私が行ってみて感じた“楽しみ方”をもう少し補足します。ニジハコcafeは、施設内のチャレンジカフェとして運営されていて、日替わりでお店が入れ替わるのが最大の特徴。しかも3ヶ月限定でオープンしている時期があるので、「気になってたのに期間が終わってた…」となりやすいです。行く前に公式アカウントの営業カレンダーをチェックするのがいちばん安心でした。 私が良いなと思ったのは、同じ場所なのに“ジャンルが毎回違う”こと。今日は体に優しいランチ、別の日はスパイス香るカレー…みたいに、気分で選べるのがデートにもぴったりでした。特に「よりそいランチ」みたいな発酵調味料（麹・酒かす等）中心のメニューの日は、味がやさしくて食後が軽い感覚。カフェごはんで胃が重くなりがちな人にも合いそうです。 もう一つの楽しみは“推し店舗を見つける”こと。7店舗のうち、どのお店が来るかでメニューも雰囲気も変わるので、最初は直感で選んでOK。気に入ったら別日に再訪して、違うメニューを試すのも楽しいです。南インドカレーのプレートの日は、副菜（サブジやアチャール）もあって食べ方の自由度が高め。辛さが不安な人は、注文時に辛さやスパイス感を聞いてみると安心でした。 当日の動き方としては、駐車場があるので車移動がかなりラク。ただ、日替わり営業＝営業時間も日程で変わることがあるので、「何時でも入れるはず」と決め打ちしないのがポイントです。私は到着時間を少し早めにして、もし混んでいたら周辺を軽く散歩→戻って入店、という流れにしました。 最後に、ニジハコcafeは“福井県でここだけ”みたいなワクワク感が強いスポットだと思います。毎日お店が変わるので、1回だけだともったいないタイプ。デートやおでかけの予定に合わせて、気になる出店日を狙って行ってみてください。
