Classic American Apple Pie
Ingredients:
For the crust:
• 300 g all-purpose flour
• 5 g salt (1 tsp)
• 15 g sugar (1 tbsp)
• 200 g cold butter
• 90-120 ml ice-cold water (6-8 tbsp)
For the filling:
• 1000-1200 g apples (6-8 medium apples, preferably Granny Smith)
• 150 g sugar
• 30 g all-purpose flour (2 tbsp)
• 5 g cinnamon (1 tsp)
• 1-2 g nutmeg (1/4 tsp)
• 30 g butter (2 tbsp)
• 15 ml lemon juice (1 tbsp)
For brushing:
• 1 egg or milk (optional)
Instructions:
1. Crust: Mix flour (300 g), salt (5 g), and sugar (15 g). Add cold diced butter (200 g) and work it in until the mixture resembles coarse crumbs. Gradually add water (90-120 ml) and mix until dough forms. Divide into two portions, wrap in plastic, and refrigerate for 30 minutes.
2. Filling: Peel and slice apples (1000-1200 g). Combine with sugar (150 g), flour (30 g), cinnamon (5 g), nutmeg (1-2 g), and lemon juice (15 ml).
3. Assembly: Roll out one portion of dough and place in a 23-25 cm pie pan. Add filling and dot with butter pieces (30 g). Cover with second rolled-out dough, crimp edges, and cut vents for steam. Optionally brush with beaten egg.
4. Baking: Bake at 220°C for 15 minutes, then reduce to 180°C and bake for another 35-45 minutes until golden brown.
