Try making our delicious Eggs & Potatoes (Skillet)
(My son’s favorite breakfast) I have to say I love it too. You have to try it!!! Here is how I make it, plus a video to show!! Hope you like it!!!
Ingredients
• Eggs ( x eggs — use however many you want)
• Yellow potatoes (I use 1 potato for 2 eggs)
• Milk (a splash)
• Butter (for the pan + 1 Tbsp for the eggs)
• Salt
• Black pepper
Directions
1. Prep the potatoes:
Wash the yellow potatoes and cut them into small pieces (or whatever size you prefer) on a cutting board.
2. Cook the potatoes:
Place a pan on the stove and add a little butter. Add the chopped potatoes.
Turn the stove on low, cover the pan, and let the potatoes cook until they’re soft and cooked through (stir occasionally so they don’t stick).
3. Mix the eggs:
While the potatoes cook, crack x eggs into a bowl. Add a splash of milk and 1 tablespoon of butter.
Beat well, then season with salt and pepper.
4. Add eggs to the pan:
Once the potatoes are done, pour the egg mixture over the potatoes. Let it cook until the eggs are set to your liking (you can gently stir for a scramble-style finish or leave it to set more like an omelet).
5. Serve:
Once cooked, plate it up and enjoy!
Notes
• Cut potatoes smaller = faster cook time + crispier edges.
• Keep the heat low so the potatoes cook through without burning.
