Brunch Eggs & Potatoes
I love a brunch so whipped up a brunch go to in our house .
I grabbed for the potatoes some :
Potatoes
Peppers
Onions
Oil
Seasoning of choice
Cheese
For the eggs :
Eggs
Cream
Tomatoes
Spinach
Everything but the bagel seasoning
Butter
Cheese
Steps :
Peel the potatoes and cut them into cubes
I put oil into a pan and added the cubed potatoes
Added some seasoning (I used Yellowstone all purpose)
I cut peppers & onions into the mix
And put the lid on & let cook
While that’s cooking I mixed in a bowl some eggs, everything but the bagel seasoning, tomatoes , cheese and cream and whisk it up .
On a pan I melted butter and spinach then added the egg mix .
Scrambled it and added it to the potatoes .
You can do the egg in one pan with the potatoes but u find doing it separate they get fluffier and I like that .
