Peanut Butter Banana Vegan Spelt Cake

I still had some spelt flour from my too good to go so I whipped this vegan cake together. I made the cake the night before and sampled it before making the glaze the next day 🤭

For the cake 🍰

I mixed 1.5 cups of spelt flour with 2 teaspoons of baking powder. I added one cup of coconut milk and 3 tablespoons of sunflower oil. I baked it for about 30 minutes.

For the glaze 🧁

I used my blender to make powdered sugar. I whisked 5 tablespoons of the powdered sugar and I added 2 tablespoon of coconut milk and a tablespoon of peanut butter. I put that with a banana in the blender and a teaspoon of arrowroot powder for good measure. I drizzled the glaze over the cake and melted some chocolate chips for zigzags.
