I am always on the look out for plant based alternatives for various meats and hearts of palm was a great choice!
I fixed up this mock lobster roll in less than 10 minutes since there’s no cooking (besides toasting the rolls) and I had vegan mayo on hand.
Ingredients:
1 can of hearts of palm drained and chopped
1-2 stalks of celery diced
1/4 cup vegan mayo
1 tsp lemon juice
1 clove of garlic diced
1 tablespoon fresh dill (less if using dry)
2 chives or green onions sliced
2 tsp old bay seasoning (I used the Cajun mix from 5 guys)
Salt and pepper to taste
Top with a dash of paprika
Directions:
Add the diced celery, chopped hearts of palm, garlic, mayo, lemon juice, and fresh herbs and seasonings. Toast the rolls with vegan butter and top with the “lobster” mix and serve with a sprinkle of chives and paprika.
It’s also possible to sauté the lobster mix in vegan butter before topping the roll if you would like it hot.
