Gajar Halwa (Carrot Halwa)
Gajar ka Halwa (Carrot Pudding). Few ingredients yet extremely delicious. My favorite Desi dessert especially during these grey, winter days.
Ingredients:
5 pounds carrots
20 oz sugar or to taste
1/2 cup Desi ghee
6 cardamom seeds
4 magaz (melon seeds)
1/2 cup soaked and peeled almonds
16oz Khoya/ Mawa
Silver leaf (optional)
Gajar Halwa, also known as Carrot Halwa, is a beloved dessert in Indian and Pakistani households, especially enjoyed during the cold winter months. Aside from the ingredients listed—carrots, sugar, Desi ghee, cardamom, melon seeds, almonds, and khoya—the secret to its rich, creamy texture lies in slow cooking over low heat, which allows the carrots to caramelize and blend beautifully with the ghee and milk solids. In my experience preparing Gajar Halwa, using fresh, sweet carrots makes a significant difference in the final taste. Grating the carrots finely can speed up cooking and help the flavors meld together better. I prefer using Desi ghee for its nutty aroma, which elevates the dish beyond the basic pudding. Cardamom seeds add a subtle spice that enhances the sweetness without overpowering it.
