Don’t knock it till you try it. I know it looks nasty but I promise you it’s so good. The only Bad thing is that it gets messy.
- One avocado
- Four slices of maple flavored spam
- 2 tablespoons of cottage cheese
- Two sheets of wasabi flavored seaweed
- Eggs
On a pan on medium heat, you’re gonna wanna cook the spam for two minutes each side.
Using the leftover grease from the spam, you can cook your eggs in it, but if you don’t want to use the leftover grease, just wash it and use olive oil I guess. Cook the eggs in a scramble and take them out.
Get your Nori sheets and spread cottage cheese on there, add your scrambled eggs, lay them as flat as possible , put your two spam cuts on the sheet then place avocado right next to it fold. Repeat on the other sheet then enjoy!!
... Read moreOkay, so you've seen the basic recipe for these surprisingly delightful breakfast sushi rolls, and I totally get if you're thinking, “Breakfast sushi? Really?” But trust me, once you dive into crafting your own, you'll discover a whole new world of morning deliciousness. My first attempt was definitely a bit messy, just like the original creator mentioned, but with a few tweaks, it's become a fun and customizable breakfast staple in my routine.
Let’s talk about rolling techniques first. The original recipe is simple, but getting those rolls tight can be a game-changer for reducing the mess. I've found that using a bamboo sushi mat makes a huge difference. If you don't have one, plastic wrap on a cutting board works wonders too. Lay your wasabi seaweed sheet shiny side down, spread your cottage cheese thinly, then arrange your fluffy scrambled eggs, crispy maple spam, and creamy avocado strips. Don't overfill it! Less is definitely more when you're starting out. When rolling, use steady, gentle pressure, tucking the ingredients in as you go. A little dab of water on the edge of the seaweed helps seal it. Once you get the hang of it, you'll be making perfect breakfast sushi rolls in no time!
Now for the fun part: ideas and variations! The beauty of breakfast sushi is how easily you can customize it. While the original recipe with maple spam, scrambled eggs, avocado, and cottage cheese is fantastic, here are some ways I've experimented to keep things fresh:
Protein Power-Ups: Instead of maple spam, try thinly sliced cooked bacon or breakfast sausage patties. For a lighter option, smoked salmon or even a veggie sausage works great. If you're going vegetarian, a well-seasoned tofu scramble can replace the eggs and spam, providing a delicious plant-based alternative.
Egg-cellent Choices: While scrambled eggs are easy, consider making a thin omelet and slicing it into strips, or even using a fried egg (just be careful with the yolk!).
Veggie Boosts: Beyond avocado, I love adding thinly sliced cucumber for a refreshing crunch, or finely shredded carrots for a touch of sweetness. A handful of fresh spinach or some sautéed mushrooms can also add great flavor and nutrients.
Creamy Alternatives: If cottage cheese isn't your thing, a thin layer of cream cheese, goat cheese, or even a dairy-free cream cheese spread can provide that creamy texture and hold everything together. A light mayo or sriracha mayo can also add a nice zing.
Sauce Sensations: A drizzle of sriracha, a tiny bit of soy sauce, or even a sweet chili sauce can elevate the flavors of your breakfast sushi. Just remember, a little goes a long way!
Spice It Up: If you can't find wasabi seaweed, plain nori sheets work perfectly. You can always add a pinch of red pepper flakes to your eggs or a tiny smear of actual wasabi paste for that kick.
Making these ahead is also a lifesaver on busy mornings. I often prep my ingredients the night before – cook the spam, scramble the eggs, slice the avocado – and then assemble them quickly in the morning. They’re best enjoyed fresh, but a chilled roll wrapped tightly in plastic wrap can still be a delicious grab-and-go option.
So, if you're looking for a creative, easy recipe to shake up your breakfast routine and impress your taste buds, give breakfast sushi a try. It might seem unconventional, but it’s surprisingly satisfying and a fantastic way to enjoy a balanced meal with a fun twist!
