Egg Salad Sandwich
I forgot how good a simple egg salad sandwich can be.
I chopped the hard boiled eggs really fine, I feel like it makes such a difference. I then added salt, pepper, chives, mayo, and a bit of mustard. You could also add paprika if you like. I usually let it sit in the fridge before spreading it on a toasted bread.
