What makes Mangú so special? It all starts with green plantains. Unlike their sweeter, yellow counterparts, green plantains are starchy and savory, perfect for mashing. The process is simple but requires a bit of love. You peel the green plantains, boil them until they're fork-tender, and then the magic happens. While still warm, they're mashed with a touch of butter or olive oil, and some of the starchy cooking water is incorporated to achieve that perfectly smooth, creamy, yet firm consistency. My abuela always said the secret was to mash them immediately after boiling – don't let them cool down! But Mangú rarely stands alone. It’s most famously paired with "Los Tres Golpes," or "The Three Hits." This classic combination includes fried Dominican salami, fried white cheese, and a fried egg, often accompanied by vibrant pickled red onions.
