I love meals that require minimal ingredients and little prep but still fill me up with good protein and fresh flavors. One of my favorites is using day-old rice sautéed with frozen corn and eggs, seasoned with soy sauce, topped with fresh tomato slices and a squeeze of lime for brightness. It’s a quick stir-fry that feels satisfying and light. When I want a heartier option, I turn to steak tostadas — refried beans, skirt steak, homemade pico de gallo, and creamy avocado mash on crunchy tostada shells. It’s easy to assemble and hits those savory cravings. No-bun burgers with sweet potato fries from the freezer aisle are another lifesaver. I add avocado mayo and a dash of hot sauce for an easy flavor boost without fuss. For even simpler meals, boiled eggs with hot sauce, cauliflower hashbrowns, and farmer cheese make a high-protein, low-effort plate that keeps me full. Lastly, sautéed cherry tomatoes with seasoned ground beef and diced onion, paired with protein pasta and marinara sauce, brings a tasty pasta dish together fast. Using store-bought marinara cuts down on cooking time but doesn't sacrifice flavor. Having these meals in rotation means I never have to rely on unhealthy fast food or skip meals when I’m too tired to cook. They’re quick, easy, healthy, and perfect for maintaining a fit lifestyle with minimal kitchen time.
