🔥🍝 Meatball Sub (Gluten Free)

Ingredients:

Meatballs:

• 1 lb meat mix (1 part beef : 2 parts pork)

• 1/2 cup Gluten Free breadcrumbs

• 2–3 tbsp broth (mixed into meat)

• Salt and pepper

• 1 tsp garlic powder

• 1 tsp onion powder

• 1 tsp Italian seasoning

• 1/2 tsp paprika

• 1/2 tsp crushed red pepper (optional)

• 1 cup broth for simmering (beef broth recommended)

Glow-Up Marinara (rich, garlicky, flavorful):

• 1 jar marinara (any)

• 1 tbsp olive oil

• 2 cloves garlic, minced (or 1 tsp jarred)

• 1/2 tsp red pepper flakes

• Pinch of sugar (optional, balances acidity)

• Salt and pepper to taste

• Splash of beef broth or butter for richness

Sub Build:

• Gluten Free hoagie or sandwich bread

• Provolone slices

• Arugula

• Butter or garlic butter

Steps:

• Mix beef + pork with GF breadcrumbs, 2–3 tbsp broth, garlic powder, onion powder, Italian seasoning, paprika, salt, pepper, and optional red pepper

• Form meatballs gently, not too firm so it’s not chewy. Aim for size of ping-pong ball for the best bite

• Heat a pan with a little oil on medium-high

• Brown meatballs on all sides until golden

• Add 1 cup beef broth, cover, and simmer on low for 10–12 minutes until juicy

• Make marinara glow-up: heat olive oil, sauté garlic 30 seconds, add marinara, red pepper flakes, salt, pepper, optional sugar and butter; simmer 5–10 minutes

• Butter both sides of Gluten Free bread

• Toast one side, flip, then melt provolone directly on the bread for stretchy cheese

• Dip or roll cooked meatballs in the upgraded marinara

• Load meatballs onto the cheesy bread

• Add arugula

• Add more marinara drizzle if desired

• Slice and serve

Tips:

• Great meatball subs are all about the meatballs — marinara should boost the flavor, not overpower it ("meatball first, sauce second")

• Beef broth gives the juiciest meatballs, chicken broth works for a lighter version

• Melting provolone onto the bread creates a fun cheese stretch

• Toasting both sides of the bread keeps everything crisp even with warm sauce
